These peanut butter energy bites were inspired by a recipe from @minimalistbaker.
We used a packet of @sainsburys pre-chopped and pitted dates 250g
A table spoon of cocoa powder (or could use cacao powder and just use a bit less).
1 Tbsp chia seeds (or sub flax or hemp seeds)
3Tbsp of good quality peanut or other nut butter. We like @meridianfoods.
2/3 cup gluten-free rolled oats (about 56g)
A splash of warm water.
Place all of the ingredients in blender and blend until everything is broken down and mixed well. Roll into balls and refrigerate in an airtight container for up to a week - if they last that long.
These are still treats, but they contain ingredients that will make you feel satisfied and actually give you some lasting energy and nutrition.
