Gluten and Dairy Free, Apple and Cinnamon Bread, and Banana Bread, both served with Cashew Butter and a Drizzle of Honey. Simple ingredients, easy to make and really delicious. The recipes use gluten free oats as the base. They are still treats, but the oats combined with the cashew butter mean they fill you up and release energy slowly, so you’re not back looking for more treats as soon as you’ve finished a slice.
The recipes are inspired by @thebakermama
Apple Bread:
3 to 5 apples
85g (1/4 cup) of maple syrup
170 g (2 cups) of gluten free oats
2 eggs
1 teaspoon of vanilla
1 teaspoon bicarbonate of soda
1 teaspoon of cinnamon
Banana Bread:
3 or 4 ripe bananas
170g (2 cups) of gluten free oats
2 large eggs
85g (1/4 cup) pure maple syrup
1 teaspoon of bicarbonate of soda
Place all of the ingredients into a blender and blend until smooth and then transfer to a silicon loaf tin to make it easy to tip out. Bake in a preheated oven at 180 C for approx 35 minutes, or until a fork inserted into the middle comes out with no mixture on it.
Once cooled we served with @meridianfoods cashew butter and a drizzle of honey. We finished it off with a delicious cup of tea. Our favourite teas are @pukkaherbs and @teapigs
