Super Easy Breakfast Granola

Recipe Details

This is a super easy way to start the day with a healthy, filling breakfast that sets you up with energy for the day. It was inspired by Amelia Freer. You literally open packets into a big container and keep fresh in the fridge. I have about 5 tablespoons and Gordon has about 8 tablespoons with some coconut or almond milk and a little warm water to bring the mix to room temp and make it easier to digest. Just leave to soak for a few minutes and enjoy. 


The mix is chia seeds, sunflower seeds, pumpkin seeds, ground flaxseed, cashews, chopped mixed nuts (or walnuts), desiccated coconut, and some raisins. 


When mixing up use about twice as much chia seeds as everything else, and go easy on the raisins or dates...just enough for a little bit of sweetness.


It takes 5 minutes to pour everything into a container and mix and lasts us both for about a week.  We store it in the fridge.


Remember sure to chew properly to help your body digest the nuts and seeds.  


Because of how the body processes fruit, I prefer to eat my fruit a before everything else but Gordon has his with his cereal and seems to be fine with it.
